Quinoa Protein Packed Guacamole

Ingredients:

16 oz. of Yucatan Spicy Guacamole

  • 16 ounce tub Spicy Guacamole
  • 1/3 cup quinoa, cooked and cooled
  • 1/3 cup roasted corn kernels
  • 1/3 cup cheddar cheese, cubed into small pieces
  • 1/4 cup red bell pepper, chopped

Directions

Mix all ingredients together and serve with fresh vegetables, sweet potato chips or tortilla chips.
